Brr .. here in Switzerland it is currently just felt minus 20 ° C outside.

Only one thing helps, a warming sun-colored and tasty soup.

Here’s the recipe:

carrot cream soup

  • 800g of carrots
  • 1 onion, small
  • 5 cm ginger
  • 3 tbsp olive oil
  • 1 teaspoon curry powder
  • 800 ml vegetable broth
  • 100 ml of orange juice
  • 250 ml soy cream
  • salt
  • black pepper
  • Soy cream and chilli threads for garnish

Dice the carrots roughly, chop the onion finely.

Heat the olive oil in a saucepan, fry the onion and ginger about 3-5 minutes.

Add the carrots and “dust” with the curry powder. Sauté briefly, then add the broth, reduce the heat and simmer gently for about 40 minutes.

Add orange juice and soy cream. Puree the soup with the hand blender. Season with salt and pepper and serve garnished with soy cream and chilli threads.

Due to a special catering for a special person, I was allowed to play juggle a bit in my mind and since baked goods were desired, my mind was constantly drifting to the croissants. In this picture you see a “Cornetti con Olivo” as well as the “Basil croissant”.

For the “convenient food”-people among you, you can even buy a so-called “Gipfeler” at Betty Bossi, which replaces the cutting of the dough for you.  I realized that Migros and Coop are selling vegan dough – so there is no exuse to prevent you from a quick aperitif reception at home!

It does not always have to be a regular burger with bun and fries. My favorites are burger patties with mashed potatoes and a fresh market salad with sprouts. I’ve eaten – so it seems to me – an endless number of convenience products and hade all kind of taste experiences (believe me). Few good and a bunch of terrible examples came across my way. With a good taste/consistency and price ratio Migros places itself on the top of awesomeness with its Cornatur Burger. Having found this great flavor, you will be able to replace the regular mince with this patty.
