*I yam what I yam*
This makes you feel good – and not just the sailors among you. Somewhat too euphoric this weekend, I went and bought a large pack of fresh spinach and thought it wouldn’t survive a day.. and so – big surprise – Easter Monday it was still waiting in the refrigerator. A recipe for rainy, cold days was needed right away.
Ingredients:
- 2 tbsp sunflower oil
- 1 onion, large, roughly chopped
- 1 clove of garlic, chopped
In a medium saucepa and then add
- 1 pack of spinach, fresh (about 400-500g)
and let it collapse on the smallest flame. Deglaze it immediately with
- 250g of coconut milk (1 small pack)
- 1 l vegetable bouillon
and to your own taste, add
- Salt
- Pepper
Blend the soup and place it in small bowls or plates and decorate it with
- Sesame seed, slightly roasted in pan without oil
- Sesame oil
